Hearty Chickpea Salad

Makes 4 large servings

  • 2 cups spinach leaves

  • 2 cups green kale

  • 1 cup arugula

  • 1 can chickpeas (rinsed)

  • 1 yellow pepper (diced)

  • 1/2 small onion (minced)

  • 1 cup chopped purple cabbage

  • 1/2 cup pumpkin seeds

  • 1/4 cup feta cheese

  • 1/4 dried cranberries

  • Cherry tomatoes (approx. 10)

  • Juice from half a lemon

  • 1/8 cup of avocado oil

  • Salt and pepper to taste


  1. Simply mix all ingredients together in a bowl and serve.


The greatest thing about this salad is it feels like a meal.  The ingredients should really be adjusted to your taste buds.

Add walnuts or sesame seeds.  Use olive oil instead of avocado oil.  Add some diced avocado.  The ingredients that "make" this salad for me are the combination of chickpeas, arugula, feta cheese and the dried cranberries.  Everything else I switch up according to what's in my fridge.
