Kale Pesto

Makes 3 servings

  • 1 bunch green kale

  • juice from 1 lemon (this amount makes the pesto very lemony)

  • 1/4 cup parmesan cheese

  • 1/4 cup walnuts

  • 1/4 cup olive oil

  • 1 shallot

  • 1 tsp sea salt

  • 1 tsp black pepper


  1. Put kale in blender and blend for 30 seconds

  2. Push the kale to the bottom of the blender with a wooden spoon then add the rest of the ingredients

  3. Blend well (approximately 5 minutes)

  4. You may need to push the ingredients down to the bottom of the blender a few times


Add to pasta, chicken, salad or you can eat it as is, like I do.

This dish is definitely for kale and lemon lovers, which is why it's one of my favorites!
