Mushroom Scramble

Makes 1 serving

  • 2 eggs

  • 2 chives 

  • 1 cup mushrooms

  • Salt and pepper to taste


  1. Heat pan to medium

  2. Add chives and mushrooms

  3. Cook for 2 minutes

  4. Add eggs

  5. Add salt and pepper

  6. Cook thoroughly and serve


You can use any type of mushroom in this recipe.

My favorites are:

  • Brown button mushrooms

  • Shiitake mushrooms

  • Portobello mushrooms


You can also substitute the chives for onions, shallots or leeks.
