Quinoa Parsley Salad

Makes 2 servings

Prep Notes

Precook Quinoa

  • Boil 1 cup of water

  • Once boiled, add 1/2 cup of rinsed quinoa

  • Return to boil

  • Cover and simmer for 12 - 15 minutes



  • All precooked quinoa (approximately 1 cup)

  • 1 bunch parsley

  • 20 cherry tomatoes

  • 1 tbsp toasted sesame seed oil (use your favorite flavored oil, use peanut oil or olive oil if you prefer)

  • 2 tsps lemon juice

  • Sea salt and pepper to taste


  1. Once quinoa is cooked, cool in fridge or rinse in cold water.  

    • I recommend cooling the quinoa in the fridge to avoid excess water in the salad.

  2. Mix all ingredients together and serve.


Taste the salad and add more oil, lemon, tomatoes or salt and pepper until it's perfect for your taste buds!


I like making this salad when I have left over quinoa in the fridge.

When cooking any type of grain, cook more than you need so you always have extra in your fridge to use in dishes like this one.
