Tomato & Cucumber Salad

Makes 3 to 4 servings

Ingredients

  • 2 large tomatoes or 20 cherry tomatoes

  • 1 large cucumber

  • 1/8 cup of juice from lemon

  • 3 tbsps avocado oil (or extra virgin olive oil)

  • 1 avocado

  • Salt and pepper to taste

Directions

  1. Dice tomatoes, cucumber and avocado

  2. Add freshly squeezed lemon juice, oil and salt and pepper

  3. Mix and serve

​

Notes

This is a simple recipe that is easy to play with.  You can add very thinly sliced red onions, remove the avocado or even add raw artichokes.  

Though the salad tastes great with any type of tomato, it tastes best with juicier tomatoes.

​

When it comes to the oil and lemon juice, play with it.  Use your own taste buds to determine how much of each you like.

Always start with less and add to your required taste!
